A tangy apple cider custard topped with burnt sugar caramel, this pie was inspired by a recipe we saw on Lottie + Doof, one of our favorite food blogs. It takes advantage of one of the last sweet ingredients available from our farmers-wonderful apple cider. We boil the cider until it is 1/4 of its original volume to get an intensly flavored syrup, then we whisk it with eggs, sour cream and a shot of Calvados for a rich custard. For the caramel, we melt the sugar until it just begins to smoke and carefully mix in heavy cream. |
